Named for the young apprentice in Hemingway’s The Old Man and the Sea and inspired by the seaside cevicherias of Latin America, Heliotrope collaborated with owners Rachel Johnson and Joe Sundberg on the design of this 40-seat Seattle restaurant. Working on a shoestring budget and owner-built, Manolin was one of Bon Apetit Magazine’s Top Ten Best New Restaurants of 2015.
